Aveyron is a huge department which has a shrinking population as a result of deindustrialisation. It is largely rural: 13% of the workforce is employed in cattle and sheep rearing, particularly Lacaune ewes, whose milk is used to make Roquefort, Perail and Tome cheeses. The local and regional authorities are facing a major challenge to maintain the population and attract new people to a department where nearly one in three people is over 65 years old. One way that they are doing this is developing local infrastructure for SMEs.
